Festive Candied Yam (Sweet Potato) Side Dish

Prepare Yams (Sweet Potatoes):

1 large sweet potato (yam) peeled and cut into 1.5" (approx) chunks.

Put into large pot of boiling water with 1 tsp salt and cook uncovered on medium boil for about 30-40 minutes until yams are tender (test with toothpick). Drain and cool then place into lightly greased 2 quart casserole dish (use approximately 2 tbsp butter).

Prepare Casserole:

In a bowl, combine 1/2 cup orange juice, 1 tbsp cornstarch, 1/8 tsp nutmeg and 1 tsp cinnamon, with 1/2 cup brown sugar. Mix well and pour mixture over yams. Top and cover with miniature marshmallows. Bake uncovered in preheated 350° oven for 30 - 40 minutes until marshmallows are browned.

Serves 4-6 (as sidedish)
