DoC's Bran Muffins

By: Gord DoC Routley

These fiber-rich, moist muffins are a delicious way to start the day. When preparing the batter, stir the ingredients just until blended. If you overbeat, the muffins will come out chewy and tough. For added flavor and texture, you could toss 1 cup of raisins or currants into the batter if you wish.

Ingredients:

1 large egg
1/4 cup sugar
1 3/4 cup milk
1 1/2 Tbsp melted margarine
2 cups bran cereal
1 cup flour
1 Tbsp baking powder
1/2 tsp salt

Instructions:

1  Preheat the oven to 400 degrees F. Prep a 12-cup muffin tin with non-stick pan spray or line the muffin tins with paper liners.
2  Beat the egg in a medium bowl. Add the sugar, milk, and margarine - beat well. Blend in the bran. Allow to stand a few minutes for the bran to soften.
3  Mix the dry ingredients together into a small bowl - add to the bran mixture. Stir JUST until blended.
4  Divide the batter amoung the 12 muffins cups; each will be about 2/3 full.
5  Bake 20 to 25 mintues, until a toothpick inserted in the center of a muffin comes out clean.

Servings: 12
