Great for appetizers, snacks, or just for fun!
Ingredients:
4 x 8" Zucchini
1 Egg
½ Cup Milk
Flour for Dredging (in brown paper bag)
½ Cups (or more) Bread Crumbs
Parmesan Cheese
Preparation:
Wash zucchini & slice off ends.
Cut diagonal slices about ½" thick or cut into slices.
Prepare egg wash by mixing egg & milk together.
Coat zucchini slices in flour in paper bag - shake off excess.
Dip slices in eggwash & then in bread crumbs.
Deep fry in hot oil (375ºF) until golden brown.
Drain on papertowels or newspaper.
Optional:
> add 1 or 2 teaspoons (to taste) of Chili powder to flour dredge
> add 1 or 2 teaspoons (to taste) of Curry powder to flour dredge
Serve with lemon wedges, a sprinkle of Parmesan Cheese & Hollandaise Sauce for dipping.
